  • Instruct staff to clean up all grease build-up – Teach your staff proper grease cleaning techniques, such wiping down every surface and the kitchen’s exhaust hood on a regular basis. Most importantly, you should explain why such care needs to be given to cleaning up any and all grease accumulation. This is one of the leading causes of devastating restaurant fires.
  • No water for grease fires! – Should a grease fire break out, your staff needs to know to not put water on the fire under any circumstances. Water will only make the fire worse.
  • Proper disposal of trash – Explain to your staff that garbage can be a potential fire hazard. Show them where to properly store trash and ask them to take it out of the kitchen on a regular basis.
  • Make sure everyone knows PAST – Teach new staff about PAST for fire extinguishers:
    • Pull out the pin.
    • Aim at the base of the fire.
    • Use a Sweeping motion.
    • Stand Ten feet away from the fire.
